Coconut Lime Pineapple Fizz — Light, refreshing, & alcohol-free. The perfect little mocktail to vibe out in this heat 🥥🔥

Recipe for Coconut Lime Pineapple Fizz
(Serves 1)

Ingredients:

1 oz lime juice
1 oz cream of coconut
2 oz light coconut milk
2 oz pineapple juice
Splash of sparkling water
Optional, coconut flakes and lime zest for rim and pineapple slice for garnish

Steps:

Rim a glass with coconut flakes and lime zest mixture.
Add ingredients to a cocktail shaker with ice and shake. Strain into a glass of choice filled with ice. Add a splash of sparkling water and garnish with pineapple slice.

While canned vegetables and sauces are a staple in just about every busy mama’s pantry, let’s talk about freezer staples that bring ease to our weekday dinners!

I like to keep @highlinercanada Pan-Sear Selects® products on hand when needing to make dinner quickly, especially the Traditional Haddock. While not only being high in protein, the delicately breaded wild caught haddock is mild in taste, which serves as a great base for any type of dish! It’s also easily made seared in a pan, baked in the oven and even the barbecue! (we see you bbq szn! 👀🔥)

This crispy pan-seared haddock with coconut cauliflower rice and fresh pineapple salsa is ready in about 20 minutes, without having to cut short all the fun and play (+ train museum visits) with the dude. Want the recipe? Continue to read below!

Ingredients:
2 High Liner® Pan-Sear Selects® Traditional Haddock fillets
2 cups fresh pineapple, diced
1 small red pepper, diced
1⁄4 cup red onion, diced
1 jalapeno, seeded and diced
1⁄2 cup cilantro, chopped
1 lime, zested and juiced
2 cups cauliflower rice
1 tbsp coconut oil
1⁄2 cup coconut milk
Salt and pepper to taste

Steps:

Cook the High Liner® Pan-Sear Selects® Traditional Haddock according to directions on the packaging.

In a medium bowl, mix together the pineapple, red pepper, red onion, jalapeno, cilantro, and the zest and juice of the lime. Season to taste and chill until ready to use.

In a large skillet, melt the coconut oil over medium heat. Add the cauliflower and season with salt. Cook, stirring frequently until cauliflower rice is tender, about 5-7 minutes. Stir in the coconut milk and cook for another 2 minutes.

To serve, add the coconut cauliflower rice to a plate. Add the haddock filet over top and the pineapple salsa. Serve immediately.

On the menu for tonight, a delicately breaded wild caught haddock with coconut cauliflower rice (gotta sneak in the veg when I can) and fresh pineapple salsa.

1 lemon, zested and juiced
1 orange, zested and juiced
1⁄2 cup cilantro, chopped
1⁄2 cup flat leaf parsley, chopped
1 small shallot, minced
1 garlic clove, minced
1 tsp Mexican chili powder
1 pinch red pepper flakes
1⁄2 cup olive oil
1 cup cherry tomatoes, halved
1⁄2 red onion, thinly sliced
Plain Greek Yogurt for serving

Steps:

Cook the High Liner® Pan-Sear Selects® Lemon Pepper Sole according to directions on the packaging.

Meanwhile, mix the juice and zest of the lemon and orange, cilantro, flat leaf parsley, shallot, garlic, chili powder, red pepper flakes and olive oil in a medium bowl. Season with salt and pepper to taste.

Add the tomatoes and red onions to a small bowl and spoon about 1 tablespoon of the citrus herb sauce and mix.

To serve, add Greek yogurt to a plate and place a sole fillet over top. Add tomato salad and drizzle with citrus herb sauce. Serve immediately.
