marinated mushroom crostini with whipped herbed go

marinated mushroom crostini with whipped herbed goat cheese ✨ seemed appropriate to reshare for the holidays !

ingredients:

200g goat cheese
100g cream cheese
2 tbsp olive oil, divided
zest of 1/2 lemon
3 tbsp chives, chopped + divided
2 tbsp flat leaf parsley
1/4 tsp red pepper flakes
salt & pepper, to taste
1 French baguette, thinly sliced & toasted in oven
1 garlic clove
1 jar store-bought marinated mushrooms

steps:

To make the whipped goat cheese, simply add the goat cheese, cream cheese, olive oil, lemon zest, chives, parsley, red pepper flakes and salt + pepper to a food processor and process until smooth and creamy. Cover and refrigerate until ready to use.
*You can prep this the night before.

For the toasted baguette, preheat oven to 400F. Add the sliced baguette in a single layer on a baking sheet and drizzle with olive oil. Bake in the oven until lightly golden brown, about 8-10 minutes. No need to flip. Set aside and let cool slightly until ready to handle and rub each slice with the garlic on top.

To assemble crostini, simply spread the whipped goat cheese mixture on each slice of toasted baguette and add a spoonful of marinated mushrooms. Sprinkle with extra chives and serve.

The best part about a fondue dinner is being able to have fun & connect with your guests. There’s very little cooking involved, so no extra holiday stress. All you need is tasty cheese, your favorite fixings for dipping and your loved ones around the table.

Perfectly sweet with a hint of spice — These nut

Perfectly sweet with a hint of spice — These nuts are so easy to make and great to have on hand for snacking, topping on salads, and gifting too ✨

ingredients // yields 3 ½ cups :

2 tablespoons unsalted butter, melted
⅓ cup maple syrup (adjust to desired sweetness)
½ teaspoon ground cinnamon
¼ teaspoon ground cumin
¼ teaspoon chili powder
¼ teaspoon cayenne pepper (add more of less to taste)
1 cup walnuts
1 cup cashews
1 cup pecans
½ cup pumpkin seeds
Salt to taste

steps:

Preheat oven to 350 F and line baking sheet with parchment paper.

In a large mixing bowl, add melted butter and spices and mix well. Toss in the nuts and mix until well coated.

Add nut mixture to the baking sheet and spread evenly. Bake until nuts are toasted and fragrant, about 15-20 minutes, flipping halfway through.

Cool completely before serving (they’ll crisp up as they cool) and/or storing in an airtight container.

Bringing this easy roasted broccoli salad back to the meal rotation. It’s ALL about that combo of roasted veg, crisp apples, feta, cranberries, crunchy slivered almonds with the maple-curry vinaigrette 👌🏽

ingredients for the salad:
3 heads of broccoli florets, roughly chopped (also love using a bag of broccoli florets at Costco to ease on the prep)
1 small shallot, thinly sliced
1 tbsp olive oil
salt+ pepper to taste
1 small apple, diced
1/4 cup dried cranberries
1/4 cup almonds, slivered
1/3 cup feta, crumbled

ingredients for the vinaigrette:
1/4 cup olive oil
2 tbsp apple cider vinegar
2 tbsp maple syrup
2 tbsp Dijon mustard
1 tsp curry powder
salt + pepper to taste

steps:

Preheat oven to 400 degrees. On a large parchment lined baking sheet, add broccoli and shallots and toss with olive oil and salt and pepper to taste. Roast for about 20 minutes, until broccoli is slightly browned, crisp and tender.

Meanwhile, prep the vinaigrette by shaking all vinaigrette ingredients together in a jar with a lid, or whisk them in a small bowl or measuring cup.

To a large bowl, add roasted broccoli, shallots, apple, dried cranberries, almonds and feta. Toss with vinaigrette and serve.

*If you want to bulk it up, you could add some chicken, tofu or more roasted veggies.
