For dinner this week, my easy Spicy Chili Lime Shr

For dinner this week, my easy Spicy Chili Lime Shrimp - Prepped and ready to-go in my Ziploc Endurables. 👌😋

I like to prep my meals and ingredients to make sure I use up my grocery purchases throughout the week because your girl ain’t letting her coins go to waste 😮‍💨 - Did you know that about 2.3 million tonnes of food goes to waste each year in Canada? I’m always looking for ways to reduce our food waste and smart storage solutions can be very helpful.
I’ve been loving storing my prepped ingredients and meals in my @ziploccanada Endurables because you can actually cook in them, since they’re made of platinum, reusable silicone! Less food waste and less dishes?! That’s a win in my books.

Ingredients:

1 lb large shrimp
¼ cup lime juice + zest of one lime
3 tbsp extra-virgin olive oil
2 tbsp chili paste
1 tbsp honey
1 tbsp soy sauce
2 cloves garlic, minced
1/4 cup chopped cilantro
1 lime cut into wedges for serving

Steps:

In the Ziploc Endurables, mix together the lime juice and zest, olive oil, chili paste, honey, soy sauce, garlic, and cilantro. Add the uncooked shrimp and seal the bag, and refrigerate for 30 minutes minimum.** I also like to reserve about ¼ of the marinade to drizzle over top of the final dish.

Preheat the oven to 425°F.
Place the Ziploc Endurables on a baking sheet and leave about 1 inch open to allow the bag to vent. Bake in the preheated oven till shrimp is cooked through, about 15-20 minutes.

Serve shrimp over rice and your choice of favorite vegetables - I always have locally grown cucumbers and cherry tomatoes on hand and some much-loved avocados. Drizzle a little extra of the reserved marinade and a squeeze of lime.

These Cherry-Chipotle BBQ Wings are the perfect dish to throw on the grill this season and can also be prepped beforehand to make dinner time a breeze!

According to the National Food Waste Council, 63% of the food thrown away in Canada could have been eaten! With smart storage solutions, we can all help to reduce it.
In our household, I love to prepare meals and ingredients beforehand to not only extend the freshness but also to help use everything up. While I can easily store food in the freezer with my @ziploccanada freezer bags, it also prevents freezer burn, making prep a breeze 👌

Ingredients:

1 tbsp olive oil
2 cloves garlic, minced
24 oz strained tomato
¾ cup water
½ cup apple cider vinegar
½ cup cherry preserves
¼ cup chipotle paste
¼ cup worcestershire sauce
¾ cup brown sugar
½ cup salted butter
Salt & pepper to taste

2 lbs chicken wings
Dry rub of choice

Steps:

In a large pot over medium heat, add olive oil and the minced garlic and cook until soft and fragrant, about 2 minutes. Stir in the strained tomato, water, apple cider vinegar, cherry preserves, chipotle chili paste, worcestershire sauce, brown sugar, butter and mix well. Bring to a boil, then reduce the heat to medium low and simmer, stirring occasionally until the sauce is reduced by about half. Taste test and add salt and pepper if needed.

Once completely cooled, you can store any extra sauce in a Ziploc Freezer bag. Simply remove the air and store flat in the freezer. Simply remove the air and store flat in the freezer.

Preheat the grill to medium heat, 400-450°F.
Place the chicken wings onto a rimmed metal baking sheet and pat dry with paper towels. Season with dry rub or salt and pepper, and set aside.

Add the wings to the grill skin-side down and close the lid. Grill the wings for 5 to 6 minutes before turning. Close the lid and grill for an additional 6 minutes, occasionally turning.
Brush the wings with some of the sauce, turning and repeating with the sauce until the wings are fully cooked. Serve with reserved sauce on the side.

Coconut Lime Pineapple Fizz — Light, refreshing, & alcohol-free. The perfect little mocktail to vibe out in this heat 🥥🔥

Recipe for Coconut Lime Pineapple Fizz
(Serves 1)

Ingredients:

1 oz lime juice
1 oz cream of coconut
2 oz light coconut milk
2 oz pineapple juice
Splash of sparkling water
Optional, coconut flakes and lime zest for rim and pineapple slice for garnish

Steps:

Rim a glass with coconut flakes and lime zest mixture.
Add ingredients to a cocktail shaker with ice and shake. Strain into a glass of choice filled with ice. Add a splash of sparkling water and garnish with pineapple slice.

While canned vegetables and sauces are a staple in just about every busy mama’s pantry, let’s talk about freezer staples that bring ease to our weekday dinners!

I like to keep @highlinercanada Pan-Sear Selects® products on hand when needing to make dinner quickly, especially the Traditional Haddock. While not only being high in protein, the delicately breaded wild caught haddock is mild in taste, which serves as a great base for any type of dish! It’s also easily made seared in a pan, baked in the oven and even the barbecue! (we see you bbq szn! 👀🔥)

This crispy pan-seared haddock with coconut cauliflower rice and fresh pineapple salsa is ready in about 20 minutes, without having to cut short all the fun and play (+ train museum visits) with the dude. Want the recipe? Continue to read below!

Ingredients:
2 High Liner® Pan-Sear Selects® Traditional Haddock fillets
2 cups fresh pineapple, diced
1 small red pepper, diced
1⁄4 cup red onion, diced
1 jalapeno, seeded and diced
1⁄2 cup cilantro, chopped
1 lime, zested and juiced
2 cups cauliflower rice
1 tbsp coconut oil
1⁄2 cup coconut milk
Salt and pepper to taste

Steps:

Cook the High Liner® Pan-Sear Selects® Traditional Haddock according to directions on the packaging.

In a medium bowl, mix together the pineapple, red pepper, red onion, jalapeno, cilantro, and the zest and juice of the lime. Season to taste and chill until ready to use.

In a large skillet, melt the coconut oil over medium heat. Add the cauliflower and season with salt. Cook, stirring frequently until cauliflower rice is tender, about 5-7 minutes. Stir in the coconut milk and cook for another 2 minutes.

To serve, add the coconut cauliflower rice to a plate. Add the haddock filet over top and the pineapple salsa. Serve immediately.
