This creamy avocado pasta, is absolutely delicious and you can make the sauce in your blender (if you don’t have a food processor like myself) in under 5 minutes, prep time included. I prefer making pasta sauce from scratch. It’s easy and so much healthier than store-bought.
Creamy Avocado Pasta
I can go a little avocado crazy! I put them in wraps, make a sauce for my tacos, put them in a grilled cheese sandwich, and down a bowl of guacamole in no time.
You really don’t need a high-end blender to create this deliciously creamy sauce. My little Black & Decker gets the job done and it didn’t cost me an arm and a leg, that’s for sure!
All you need are a couple of avocados, basil, spinach, lemon, EVOO, garlic, salt and pepper. A bit of minced chili peppers is a great addition to the sauce, but totally optional.
Top it off with some parmesan and basil for garnish, and voilà! You have a pretty meal that you can impress your family and friends with. It would also be really good with some sun-dried or cherry tomatoes. Want to add meat? I suggest grilling some shrimp or chicken.
But I can’t guarantee that you’ll look as sexy as I do eating it. I definitely have not mastered the art of looking attractive while eating. Is there even a such thing? Okay, well maybe if you’re Heidi Klum or Sofia Vergara, right?!?

To make this pasta even healthier, you can replace the spaghetti with zucchini noodles, if you own a vegetable spiralizer. It doesn’t have to take hours to make your own sauce.
