For this crispy cod recipe, we love to use High Liner® Signature Cuts® Crispy Cod Fillets. Now, let’s chat about making life easier with some meal planning tips.
Make it a weekly ritual: I love my weekly routine of sitting down and flipping through some of my favorite cookbooks. I’ll also scroll through my Pinterest feed and Notes app of recipes I’ve been meaning to make. For me, it’s a fun and relaxing time to plan out some recipes that will bring ease to my week.
Think about your mood and schedule: Take a look at your schedule for the week ahead. From sports for the kids to charged work days, this will greatly affect the time you have to make dinner. A snowy day in the forecast or maybe a sunny long weekend ahead? We may crave the ultimate cozy meal or something that’s light and fresh. These are all key factors that come into play. This is greatly why I love High Liner products. They’re packed with nutrients and lend well to busy weeknights. Cooking from frozen, you don’t have to worry about having thawing times or too much prep for the main protein in your dish.
Double Duty Ingredients: When I’m planning my meals, I’m always thinking about ingredients that can lend themselves to at least 2 different recipes for the week. Getting a large head of cauliflower? I’ll use half for a quick cauliflower rice and the other for added vegetables for a sheet pan meal. Cabbage on the list? An easy coleslaw for a main or side and thrown into a pot later in the week for an epic soup. It’s the same when it comes to a main protein.

Repurposing Leftovers: Dinner and kid lunches tend to be a priority on the weekly menu, but one simply cannot forget about lunch. For dinners, I always like to make a little more and it never goes to waste. I’m a creature of habit and whip up some sort of big “lunch bowl” almost daily. It’s typically filled with leftover veggies or protein from previous dinners mixed into a leafy or grain salad. Embrace the leftovers!

Ingredients
4–6 High Liner® Signature Cuts® Crispy Cod Fillets
1 lb (450g) sweet broccoli tender stems, halved
2 tbsp avocado oil
1 tbsp garlic powder
salt & pepper to taste
For the Chili Garlic Sauce
1 tbsp avocado oil
1 tsp sesame oil
2–3 garlic cloves, minced
2 tsp fresh ginger, minced
3 tbsp sriracha
2 tsp soy sauce
2 tbsp brown sugar
1 tsp chili flakes
1/2 cup water
2 tsp lime juice
Sesame seeds, green onions and red chillies for garnish
Instructions
Preheat the oven to 450F. Line a large baking sheet with parchment paper and set aside.
Cut the sweet broccoli tender stems lengthwise into halves. In a small bowl, toss together the broccoli, avocado oil, garlic powder, and salt & pepper until combined.
Add the High Liner® Signature Cuts® Crispy Cod Fillets to the sheet pan and bake for 24 minutes, turning halfway through. Once ready to turn over, add the broccoli to the sheet pan and bake until cooked through.
In a small saucepan, add avocado oil and sesame oil on medium heat. Cook garlic, chili and ginger until golden, about 20 seconds. Add the sriracha, soy sauce, brown sugar, chili flakes, water and mix well. Simmer and reduce the heat until the sauce thickens – a syrup like consistency. Stir in the lime juice and set aside.
To serve, plate the broccoli layering the cod over top. Drizzle with chili garlic sauce and garnish with sesame seeds, green onions and a couple of chopped red chilis for extra spice.
