It may be mid-august and the fall-loving basic b that I am is wishing for the cooler season BUT it’s still SUMMER YO! As much as my soul wants to kick summer to the curb, I simply can’t ignore the sunshine and the bounty of fresh produce at our local farmer’s markets- which truthfully, I really do love and will miss. So, we’re giving it a final push on summer dishes before it’s time to welcome ghosts, gourds and goblins. Let’s jump to this recipe before I start typing out an ode to Fall…

Mediterranean Salmon Bowls

Ok, so that last one isn’t a real word, but Mediterranean flavours are beyond delish. Nothing truly screams a summer dish more than feeling like you’re being transported to Greece with their fresh and delish flavours! P.s. as I typed that last sentence, I totally wished that could legit happen. Taking a bite into food and instantly being transported to a country that inspired those flavours. That would be the dream! I digress…Back to the Mediterranean Salmon Bowls.
Mediterranean Salmon Bowls
Lemon greek marinated Salmon, loaded with quinoa, cute cucumber rolls, tomatoes, fresh herbs, tzatziki and feta cheese.

Ingredients
Ingredients for Salmon
1 lb fresh salmon, cut in 4 pieces
6 tbsp lemon juice
3 tbsp olive oil
2 tbsp balsamic vinegar
1 tbsp garlic, minced
1 tbsp oregano
1 tbsp dill
salt & pepper to taste
Salmon Bowl
3 cups quinoa or couscous, cooked (1 cup dry)
2 large cucumbers, chopped
1 cup cherry tomatoes, halved
2 tbsp olive oil
1 box Krinos Feta Multi-Pack
255 g tzatziki
juice of 1 lemon
microgreens & fresh dill for topping
Instructions
In a large bowl, combine lemon juice, olive oil, balsamic vinegar, garlic, oregano, dill, salt and pepper. Stir till well combined. Add salmon and coat well. Sit for 15 minutes. Cook quinoa or couscous according to package instructions.
Heat your grill or skillet to medium-high heat. Add salmon and cook for about 3 minutes a side or till desired wellness.
For the bowls, divide quinoa or couscous. Add salmon, cucumbers, cherry tomatoes, Krinos feta cheese and tzatziki. Drizzle bowls with lemon juice and add fresh dill and microgreens for garnish.
