Holiday Appetizer: Cucumber Rolls — Making the holidays a breeze with these simple canapés filled with Boursin cheese, piquillo pepper bruschetta, and a little salt and pepper!
We’re a little over two weeks away from the holidays and all that’s on my mind is spending time with my family and the yummy food we’re going to eat (and serve). But let’s talk about something that weighs a little heavy here…on our pockets that is! Not only is this season filled with hugs from loved ones, full bellies, and jolly. You’ll also find yourself whipping those cards (and cash) and saying “take my money but don’t make me broke, ok!?” So, for sake of not comparing my wallet to an onion this year (because opening it makes me cry…), I thought it would be a fun idea to challenge myself and create 3 party appetizers that were a little nicer to my holiday budget and also sweat-free. #cookinglifemotto
Now, you’ll find a common theme amongst these holiday canapés and that is Boursin cheese! Ok ok. Boursin isn’t the cheapest out there BUT it was on sale at Costco for $5 (and change) for a two-pack, and I’m using it in EVERYTHAAANG. Why? Because cheese is life. Point final. For the cucumber rolls, I also added my FAVE store-bought piquillo pepper bruschetta. It’s beyond delish and you won’t regret this flavour combo!
To make these cute cucumber rolls, it doesn’t require any fancy tools! All you need are your hands, a mandolin or vegetable peeler, spoons, a little Christmas spirit, and the best playlist to jam to. 😉 And a tip for you- After peeling/slicing the cucumbers, I place slices on a paper towel for about 10-15 minutes, to try and absorb as much water as possible. The last thing we want a dish full of water.

Ingredients
- 1 large cucumber
- 150g Boursin cheese (Garlic & Fine Herbs)
- 100g (1/2 cup) piquillo pepper bruschetta
- salt & pepper to taste
Instructions
- Using a peeler, peel a whole cucumber lengthwise. Once you’ve reached the center, turn the cucumber over and continue to peel. Cut each strip in half.
- In a small bowl, mix boursin cheese and piquillo pepper bruschetta together.
- Spread the mixture on the cucumber slices and roll up.
- Sprinkle a little salt & pepper to taste, and serve chilled.
