Holiday Appetizer: Cucumber Rolls

  • 1 large cucumber
  • 150g Boursin cheese (Garlic & Fine Herbs)
  • 100g (1/2 cup) piquillo pepper bruschetta
  • salt & pepper to taste


  1. Using a peeler, peel a whole cucumber lengthwise. Once you’ve reached the center, turn the cucumber over and continue to peel. Cut each strip in half.
  2. In a small bowl, mix boursin cheese and piquillo pepper bruschetta together.
  3. Spread the mixture on the cucumber slices and roll up.
  4. Sprinkle a little salt & pepper to taste, and serve chilled.
