Warm days call for simple fresh salads and this pineapple cucumber combo with jalapeño lime dressing fulfills that craving 👌🏽🤤

Ingredients:
1 large cucumber, sliced
1/2 cup pineapple, diced
1/2 red onion, sliced
1 jalapeño, seeds removed & sliced
cilantro for garnish (or parsley)

For the jalapeño lime dressing:
1 jalapeño, seeds removed
1 clove garlic (I put two - love it extra garlicky)
1 small shallot, roughly chopped
1/4 cup cilantro (or parsley)
1 tbsp honey
Juice of 2 limes
1/2 cup olive oil
1 tbsp white wine vinegar
1/4 tsp cumin powder
Salt & pepper to taste

Steps:

For the dressing, add all the ingredients to a blender and blend until well combined. Drizzle in olive oil last and taste to adjust.

For the salads, simple all add your ingredients to a bowl, add a healthy drizzle of the dressing and garnish with extra cilantro.

*Notes
Dressing keeps in the fridge up to 5 days.
& chopped peppers, avocado and feta would be good additions to the recipe!

To make, simply slice melon of choice in half, remove seeds and fill with yogurt and toppings of choice.

I added:
Greek yogurt
homemade berry chia seed jam
slivered almonds
toasted coconut flakes
fresh berries

lemon & herb butter scallops made in 20 minutes —
serve with some rice or salad, and you got yourself a quick dinner. 👌🏽

ingredients:

8-10 large scallops
salt & pepper to taste (about 1-2 tsp each)
2 tsp olive oil
4 tbsp salted butter
Juice of 1 lemon
2 garlic cloves, minced
1 tsp red pepper flakes
1/4 fresh parsley, chopped

steps:

Pat the scallops dry and season with salt + pepper.

Heat olive oil in a cast iron skillet over medium heat. Once oil is sizzling, add scallops and sear on both sides until browned, about 2-3 minutes each side. Remove and set aside.

Reduce heat to low and add the rest of the ingredients to the skillet. Cook until fragrant, about 2-3 minutes and remove from heat.

To serve, plate the scallops & drizzle sauce.

a good hearty filling lunch bowl please and thank yew 👌🏽

chorizo spiced roasted sweet potato bowl with lime cilantro rice, corn, black beans with a healthy drizzle of jalapeño aioli and a little fresh herbs and extra jalapeño for garnish.

for the homemade chorizo seasoning:

3 tbsp smoked paprika
1 tbsp ground ancho pepper
1 tbsp cayenne
1 tbsp garlic powder
1 tbsp ground cumin
1 tbsp dried oregano
1 tsp freshly ground black pepper

I used about 2 tbsp of the seasoning & avocado oil for 1 large chopped sweet potato. Roasted in the oven at 425F for 30-35 minutes, flipping halfway through.

for the jalapeño aioli:

1/3 cup mayonnaise
1 jalapeño, seeds removed and chopped (I like to leave some of the seeds for more spice)
2 garlic cloves
Juice of 1 lime

add ingredients to a blender or food processor and blend till smooth.

For the bowl to come together quickly, I had some store bought cilantro lime rice.
Simply add desired ingredients to a bowl and enjoy!
