These strawberry and hemp heart yogurt bark will be one of the easiest recipes you’ll make! With only three ingredients, strawberries, vanilla greek yogurt and the oh so mighty superfood, hemp seeds. Put that all together and you have one healthy no-bake snack..or breakfast if you’d prefer 😉
It’s no secret that I LOVE hemp seeds. If you follow me on Instagram, you may have seen a few breakfast posts sprinkled with a little hemp love. I’ll admit, it’s sometimes difficult to keep up with every new superfood being touted as the “healthiest thing you can eat.” Kale, quinoa, chia seeds, açaí berries… I could go on, but you get the point. It’s so hard to know what’s the real deal and what’s the marketing hype. Girl, I feel you! But don’t worry, I got you!
When it was recommended to me by my son’s nutritionist, I learned all about the amazing nutritional value these little hearts have.
- 10g of protein and omega 3&6 per 30g serving
- Loaded with fiber and iron
- They are a complete protein
They have a slightly nutty taste, very similar to sunflower seeds or pine nuts. I sprinkle that stuff on everything! Some of my favorite ways to eat them…
- Sprinkled on salads
- Sprinkles on oats
- Added in smoothies
- Making pesto sauce
OH, and I can’t forget about my sneaky mom trick! Jude has autism spectrum disorder with a few sensory issues. He was once a fantastic eater but now has a very limited diet. He was lacking many important nutrients and one of them being protein.
Every. Single. Morning.
This dude eats 2 slices of toast with Nutella. Because I can’t get him to eat anything else, we started sneaking in 2 tbsp of hemp seeds. It blends right into the Nutella without him noticing and TRUST ME, this dude inspects everything that he eats.
With this new recipe, I’m adding it to one of my favorite ways to eat hemp seeds! On hot summer days, nothing sounds better than a frozen treat. Instead of having sugar-loaded ice cream or popsicles, substitute with a greek yogurt bar! The strawberry and hemp heart yogurt bark is loaded with protein. Strawberries are nutrient-rich and packed with antioxidants, like vitamin C. This is definitely the kind of healthy frozen treat you and your kids will love!
PrintStrawberry and Hemp Heart Yogurt Bark
- Total Time: 180
Ingredients
- 2 cups vanilla greek yogurt
- 1 cup strawberries, sliced
- 1/2 cup hemp seeds
Instructions
- Into the greek yogurt, mix in the hemp seeds. You can also mix in the strawberries if you prefer.
- Pour mixture onto a parchment paper-lined rimmed baking sheet, spreading it out to be about ¼ inch (½ cm) thick.
- Sprinkle with strawberries.
- Freeze for a few hours, until hard.
- Remove from freezer. Using a knife or hard spatula, break the bark into chunks. Transfer to an airtight container and store in freezer.
