Spicy White Bean Tortellini Soup— The perfect comforting dish for the cold season.
‘Tis the season for soups, chilis, and aaalll the stews!
On Sundays, I love to spend time in the kitchen getting meals prepped for the new week. My specialty? One-pot batches of hearty meals! As much as I miss all the farm fresh summer fruits and veggies, I equally get excited whipping up Fall and Winter dishes, like this spicy tortellini soup, of course.
Now, I can’t take full credit for this recipe. A few years ago, the mister and I were pretty sick. My mother-in-law made her way over to our place with all the ingredients in tow, to make us some spicy tortellini soup. Not wanting to risk having the soup spill in the car, the easiest route was to bring everything to make it at our place—I should mention that she lives in the US. Ever since that day, this tortellini soup became our go-to when we’re feeling a little in the dumps.
I got 99 problems but Rubbermaid Brilliance ain’t one…
I have a bit of an obsession buying/testing out different food containers. See, I’m what the general population would call picky. Personally, I call that a girl who knows what she wants. How many times have you made a tomato based recipe and it stained all of your containers? How about that curry? Should we talk about glass one shattering because we’re incredibly clumsy? Oh, and how about that time when we ruined all those cute tote bags because our delish meals leaked out? Yeah, I’m not too fond of these memories either…
From one “picky” girl to another, I’m letting you in on my absolute favorite that will put all those food container nightmares to rest. Meet Rubbermaid® BRILLIANCE™! Stackable, light, crystal clear after each wash, leakproof, and pretty dang cute. Because let’s face it, after years of having a mix-match of different containers, it sure is soothing on the eyes to have cupboards and a fridge filled with these sleek bad boys!
I can’t help but laugh at myself for being so obsessed with these food containers, but hey, what can I say! When you find something as good as these, you gush about it and tell the world. Because really though, what kind of friend would I be if I didn’t share all the best finds with you? Psst! You can find them at Walmart, btw… So now that you’ve bought these containers, let me give you the recipe to this delish spicy white bean tortellini soup that you can fill them up with.
Ingredients
- 2 tbsp olive oil
- 1 small white onion, diced
- 2 cloves garlic, minced
- 2 cups baby spinach
- 1 540ml can white beans, rinsed and drained (can be navy, cannellini or kidney beans)
- 1 796ml can diced tomatoes (spicy flavor if you can find)
- 2 cups vegetable broth
- 1 8oz package cheese tortellini
- Salt + Pepper to taste
Instructions
- In a large pot on medium heat, sautee the onions with olive oil until translucent (about 5 minutes). Add the garlic and cook for an additional until fragrant (about 2 minutes).
- Increase the heat to medium-high and add the baby spinach, beans, tomatoes, and vegetable broth and bring to a simmer.
- Add the tortellini and cook until tender. (about 10 minutes)
- Season with salt and pepper to taste, and serve.
Notes
If you cannot find spicy diced tomatoes, simply add a dash or two of sriracha.
If you prefer the soup without any spice, simply use regular diced tomatoes.
