Breakfast popsicles are a thing and I’m totally obsessed with them.
Beat the summer heat with a tasty frozen treat! These Peaches and Cream Breakfast Popsicles make a delicious and healthy breakfast on the go!
Peach season is at its peak throughout the month of July and August, so last week I went a little crazy at my local Farmer’s Market and bought a lot of peaches. I couldn’t help myself! They are so juicy and sweet, and a little nostalgic to me.
When I first moved in with the Mr and we would do groceries together, I would always have to get a box of Quaker apple cinnamon instant oatmeal and he would get the peaches and cream flavor. Now don’t judge me on this not so healthy choice, I was 19 and that was probably the healthiest thing I ate back then. Now back to the sentimental story. One morning I decided to give it a try and I fell in love! On our days off, we would relax and vibe out to music while eating our little bowls of instant oatmeal. The sweet smell that would fill up our apartment, is a scent that triggers those old feelings of newfound love.
Now fast forward to the present. Our mornings are wild! Jude the dude waking up anywhere from 5 am to 730am immediately demanding breakfast (because he always wakes up starving like his mama) while running around the house making as much noise with his trains as he humanly possibly can. The Mr having to work early and with myself barely capable of opening my eyes before 8 am, these peaches and cream breakfast popsicles are lifesavers. Filled with greek yogurt, peaches (duh) and a honey granola with coconut flakes and almond slices, I hesitate to even call this a recipe. I also cheated a little. I could have totally made my granola, but the awesome peeps over at Mix It sent me my own customized cereal, which made these breakfast popsicles THAT much easier.
HOLLA!
