This may be my favourite dessert I’ve made to-date! Aside from the fact that I have an undying love for Fall and firmly believe it’s the best season for cooking/baking – are you aware of my yearly tradition of pumpkin recipe posts filled with odes to Fall? The pumpkin spice sheet cake is moist, not too sweet and isn’t overly complicated to make. Add a little maple-bourbon cream cheese frosting and it’s heaven for your taste buds.
A Few Notes…
To ensure a super moist cake, let it completely cool before removing it from the pan. When the warming pumpkin spice scent fills your home, it is so tempting to start cutting into it fresh out of the oven. If you do, you’ll only end up making it dry.
To frost or not? I adore the bourbon cream cheese frosting and would stand by the fridge and eat it by the spoonful. Truth be told, 9 times out of 10, we eat this without the frosting. (Yes, that’s how often we bake this cake.) I like to slice it in little squares and reach for it when we have that little sweet craving during the day. We always have a pot of caramel in the fridge and it goes perfectly with the pumpkin spice flavour as well. It’s such a delicious easy-to-grab dessert, so frosting or not, you can’t go wrong!

2 cups all-purpose flour
2 tsp baking soda
For the Frosting
1 8oz package cream cheese, softened
4 tbsp butter, room temperature
2 cups confectioners sugar
1 tsp vanilla
1–2 tbsp maple syrup
1 tbsp bourbon
1 1/2 tsp cinnamon
1 tsp nutmeg
1/2 tsp salt
1 can pumpkin pie filling
1 cup sugar
1 cup vegetable oil
4 eggs, lightly beaten
