Pumpkin Spice Granola

Ingredients

  • 1/2 cup pumpkin puree
  • 1/4 maple syrup
  • 1/4 coconut oil, melted
  • 1 tbsp pumpkin pie spice
  • 1 tsp vanilla extract
  • 1 tsp salt
  • 2 1/2 cup rolled oats
  • 1/2 cup pecan
  • 1 cup pumpkin seeds
  • 1/2 cup coconut slices

Instructions

  1. Preheat oven to 350 degrees F.
  2. In a bowl, mix pumpkin puree, maple syrup, coconut oil, pumpkin pie spice, vanilla extract and salt together. Mix well!
  3. Stir in rolled oats, pecans, pumpkin seeds, and coconut slices. Mix well!
  4. On a parchment lined baking sheet, spread mixture evenly and bake for 25-30 minutes.
  5. Let completely cool before storing.

Notes

You may substitute coconut oil for vegetable oil.

For a sweeter granola, you may add 1/2 cup maple syrup instead of 1/4 cup. You may need to cook it 5 minutes more due to the granola being a little more wet.

Store in a airtight container or glass jar. Keeps up to 2 weeks.

Optional: You may add dried cherries or cranberries, and chocolate chips. Or you can swap out any of the ingredients to ones that you prefer. This recipe is extremely versatile and can easily be adjusted to your taste.
