Creamy Avocado Pasta

Ingredients

Scale
  • 12 ounces of spaghetti
  • 2 ripe avocados, peeled and seeded
  • 1/2 cup basil
  • 1/2 cup spinach
  • 2 cloves of garlic
  • 1/2 Tbsp minced chili pepper
  • Juice of half a lemon
  • 1/4 cup EVOO
  • 1/4 cup water
  • Salt and pepper to taste
  • Shaved parmesan to taste
  • Basil for garnish

Instructions

  1. In a large pot of boiling salted water, cook pasta according to package instructions- drain well.
  2. To make avocado sauce, combine avocado, basil, spinach, EVOO, water, garlic, and minced chili peppers in the blender. Season with salt and pepper to taste.
  3. In a large bowl, combine pasta and avocado sauce.
  4. Top it off with some parmesan and basil for garnish.
  5. Serve immediately.
